This sausage skillet with onions, peppers, & roasted sweet potatoes has become one of my go-to recipes because it is that delicious and easy to make! The combination of the sweet and savory hits the spot every time. This is a healthy meal that you can get done in 30 minutes on those busy nights where you are short on time and want minimal clean up. It’s nice and filling, low calorie, and great to meal prep with since it re-heats nicely.

A friend of mine shared a recipe similar to this one that was made with steak tips a few months back. I don’t eat red meat but it inspired me to come up with a recipe that my family and I would enjoy. This recipe is easily adaptable so try changing the meat, or adding different veggies if you want!

Ingredients:
- 1 Package of fully cooked chicken apple sausages
- Coconut oil
- 1 Onion
- 1 Green pepper
- 2 large sweet potatoes
- Salt
- Pepper
- Garlic powder
- Sriracha

Steps To Make Sausage Skillet with Onions, Peppers & Roasted Sweet Potatoes
Step 1:
Preheat oven to 400 degrees.
Step 2:
Peel & cut up sweet potatoes in 1/2 inch cubes. Add to a mixing bowl.
Step 3:
Add 3 tbsp. melted coconut oil to sweet potatoes, 1/2 tsp. garlic powder, 1/2 tsp. salt, black pepper to taste. Mix up well and add to baking sheet with silicone mat or greased aluminum foil. Bake for 20-25 minutes.

Step 4:
Add 3 tbsp. coconut oil (or an oil of your choosing) to a preheated cast iron skillet set on medium low.
Step 5:
Cut up onions in large pieces and add to skillet.

Step 6:
Cut sausages down the middle the long way, then in 3/4 in pieces and add to skillet. Turn every few minutes to ensure you are cooking on all sides. (if you are using pre-cooked sausages there is no certain time you need to cook them for, you just want to make sure you are browning them.)
Step 7:
Rinse and cut up green pepper into 1 inch pieces.
Step 8:
Once the sausages are browned, add green peppers, stir & cover. If the onions seem like they are sticking to the pan you can add 1/4 cup of water to deglaze the pan. This will give you a nice juice as well and help steam the green peppers. Cook for another 7 minutes, or until the peppers are done to your liking.

Step 9:
Remove the sweet potatoes from the oven, test with a fork to make sure it goes in easily. If not, place back in oven for a few more minutes.

Step 10:
To plate: layer sweet potatoes on bottom & place sauteed sausages, onions, & peppers on top. I add sriracha to balance out the sweetness of the dish. It gives the perfect sweet and savory touch! Enjoy!
